“Mom, can we have that salmon dinner that has the avocado on top?”

Magic. Freakin’ magic when I hear anything that starts with, “Mom can we have…..” Right? It’s a double fist pump moment that sets my heart a-flutter!

I love to try new recipes and in order to make it a second time, all 4 of us must love it. Our code is “make-again.” This recipe is one that is definitely a make-again and has been in the rotation for years. I love it not only because of the flavors, but because of how easy it is to make. I am a bit of a sucker for salsas that go with meat and this one has avocado, mango, cilantro and red onion, which to me is an incredible combination that makes my eyes roll and induces some slight heavy breathing…..

Imagine my outright glee when a friend of mine reached out and asked if I had any recipes that her kids could cook. She explained that she had nights where she was just too busy to cook and needed to pass the reigns over to her 16 year old daughter. The only criteria was that suggestions had to be easy and tasty.

Hell yes! I immediately sat down and could feel my creative juices flowing.

Salmon is something that is very easy to make and usually requires only a couple of ingredients. Think lemon, butter and garlic to cook your salmon in and you have a delicious and flavorful meal.

This recipe has a dry rub on the salmon to lend a little crunch and the salsa on top takes it to whole other level of flavor. Cook some rice and steam some broccoli and dinner is done in a pinch!

Baked Salmon with Avocado Salsa

Ingredients
  

  • 1 tsp each Paprika, Garlic Powder, Onion Powder
  • 1 Avocado
  • 1/4 cup Cilantro chopped
  • 1 Lime
  • 1 Mango chopped
  • 1/4 Red Onion diced
  • 1 Fillet of Salmon

Instructions
 

  • Preheat oven to 400 degrees.
  • Grease sheet pan with cooking spray.
  • Combine dry spices and rub all over the salmon fillet.
  • Place the salmon on the sheet pan and bake 15 minutes.
  • In a mixing bowl, combine chopped avocado, cilantro, mango, onion and juice from 1 lime.
  • Serve salsa on top of salmon.
