I made this for my daughter and it was just so easy – she inhaled them immediately.
I was a bit hesitant as the recipe calls for frozen blueberries and I wanted to add fresh, but the frozen berries were definitely the way to go. All you do is mix the dry ingredients in a bowl and the wet in a separate bowl. Then, combine and voila! Toss them in the oven and in 20 minutes you have super delish snacks.
Seriously, this takes less than 15 minutes to prepare and within half an hour, you are eating a fresh, made from scratch muffin. If this is your first baking venture, you got this.
- 1¾ cup all purpose flour
- ½ cup white sugar
- 3 tsp baking powder
- 1 cup milk
- ½ cup melted butter
- 1 egg
- ½ tsp salt
- 1 cup frozen blueberries
- Stir together dry ingredients and add frozen blueberries.
- Combine egg, milk and melted butter. Stir into flour mixutre and blueberries stirring just to moisten. Do not beat.
- Add paper cups to muffin tins and add until mixture is not quite to the top of the paper cup.
- Bake in 375 degree oven for 20 minutes
