I really enjoy making this side dish because it is SO easy and it tastes SO delish!

Don’t be mistaken though-this is not a sauce that is on the broccoli, rather it is fresh lemon juice, zest and olive oil that make it “saucy”. The flash of diced red peppers not only looks appealing, it tastes fantastic. I know, a lot to say about broccoli, right?

Here’s the thing.

I really enjoy making side dishes that take very little effort and tastes like I slaved. This side dish whips together fast with ingredients that you probably already have on hand. Oh, and another thing. I really enjoy my broccoli tender crisp. This means that the broccoli is cooked but it is still crispy and crunchy. To get the best results, it is all about steaming. When you boil water in a pot and place a steamer on top, this is the healthiest and most efficient way to cook your veggies-especially your broccoli.

Something else to think about… If you are cooking where there is lemon already in the marinade or in the sauce, this is the perfect accompaniment. The flavors won’t “fight”, rather, they will work perfectly together. Think salmon in white wine, garlic and butter with a squeeze of lemon. This would be ideal!

Broccoli with Lemon Sauce

Ingredients
  

  • 1 tbsp Fresh Lemon Juice
  • 1 tsp Fresh Lemon zest
  • 1/2 tsp Salt
  • 3 tbsp Olive Oil
  • 2 tbsp Red Bell Pepper diced
  • 1 lb Broccoli Spears

Instructions
 

  • Steam the broccoli for 4 minutes until tender crisp.
  • In a bowl, combine the lemon juice, zest and salt. Gradually whisk in the olive oil, then stir in the red pepper.
  • Once the broccoli is done, toss in the sauce and serve.
