I am a big believer in repurposing meals.

My kids are not a fan of leftovers-eating the exact same thing the next day-so I get a bit creative and use the same items from a previous meal, and use it for something completely different. With a little forethought and planning, I multipurpose most of my lunches for the week. And my kids are none the wiser!

As an example, if I make chicken or steak, I make extra for salad or to put in a fajita. I have even used leftovers to pasta the next day! Think about how you can repurpose-it will decrease your time in the kitchen and will be a nice change from sandwiches.

With this in mind, think about the Balsamic Chicken the Balsamic Chicken wrap. Make extra chicken and use the leftovers to repurpose in this flavorful wrap for either lunch or dinner in a pinch.

How to Assemble

Take the tortilla wrap, sliced the cooked chicken and place in the center of the wrap. Warm it up if you wish. Add lettuce, dried cranberries, goat cheese, chopped pecans, and drizzle with balsamic glaze if you’ve got some. If not, drizzle with balsamic vinegar.

Think about how you can repurpose by cooking once and eating twice! Map it out, write it down.
