Years ago, my hubby Rick and I went to our friend’s place for dinner. They were always amazing at pulling together fantastic food that seemed so effortless and decadent. She served this salad for the 4 of us and I grabbed the recipe immediately – since then, I have made it for almost all large gatherings, including potlucks. It is so easy to prepare ahead of time.
I still remember making this for a Christmas party and overheard a few people say, “Who made that salad? That was amazing!”
Now, if you are planning on making this, it is easy to chop ahead of time and assemble it just before putting it on the table for everybody to inhale. And trust me, they will! And I would highly recommend plating this salad rather than assembling it in a bowl. It looks better and it is easier to grab with tongs
This recipe initially called for Roquefort cheese, but Rick is not a fan of any type of blue cheese, so I adapted it for his taste buds and it tastes just as delicious!
Goat Cheese and Pear Salad
- Lettuce-I prefer romaine, but whatever you have on hand is fine.
- 2 Pears-peeled and sliced thinly
- 6 oz Goat Cheese-or Roquefort
- ½ cup Green Onions-thinly sliced
- 1 Avocado-peeled and sliced
- ½ cup Pecan Pieces
- ⅓ cup Olive Oil
- 3 tbsp Red Wine Vinegar
- 1½ tsp White Sugar
- 1½ tsp Mustard
- 1 clove Garlic-minced
- ½ tsp Salt
- Blend all dressing ingredients.
- On a plate, layer salad ingredients as follows: lettuce, pears, cheese, avodado, green onions.
- Top with pecans.
