Listen, we all have nights where we work late and the last thing you want to do is cook. Yup, I have been there and I totally get it. This is one of the easiest recipes to pull together in a pinch. It takes less than 5 minutes to put these ingredients in a bowl and whisk together. Prep your veg-again, it takes less than 5 minutes to do this. You can do this while you are waiting for your toast to pop making breakfast!
The other bonus is that these are all ingredients that you have in your pantry, so no need to run out and get “that one ingredient”.
My routine? For breakfast, I like an egg and toast first thing in the morning. While my egg is cooking and my toast is toasting, I add all the sauce ingredients in a bowl and toss in the fridge. Then I pull out my broccoli and coarsely chop. Next, I put the florets in a bowl and toss in the fridge. By that time, my egg is done and my toast has popped. I don’t even think about it again until I take a pause at lunch. During my lunch break, I prep my potatoes and put in a bowl, cover with water.
Why do I love this? Because I take about 10 minutes to prep during the day and then when I am ready to cook, everything-and I mean EVERYTHING-is prepped to be cooked. I turn the elements on and once hot, I’m cooking!

Maple Soy Glazed Chicken
- 12 boneless skinless chicken thighs
- 1 tbsp olive oil
- 2 tbsp maple syrup
- 2 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 1 tbsp chopped fresh parsley
- Season the chicken with salt.
- Heat olive oil in large fry pan on medium high heat. Add chicken.
- In a small bowl, combine maple syrup, soy and vinegar. Add to pan with chicken. Bring to a boil.
- Flip chicken every few minutes for a total of 15 minutes until thighs are cooked.
